Savory Rice Loaf

  • 3 eggs, slightly beaten
  • 1 ½ cups cookedrice
  • 1 ½ cups grated cheese
  • ½ cup dry bread crumbs
  • ¼ cup chopped celery
  • 2 Tbsp. chopped onion
  • 2 Tbsp. chopped parsley
  • 2 Tbsp. green pepper
  • ¾ tsp. salt
  • 1 cup milk
  • ¼ cup melted margarine

Grease 9x5x3-inch loaf pan. Mix all ingredients together and pour in loaf pan. Place loaf pan in baking dish containing 1 inch hot water. Bake at 350°F for 1 hour or until loaf is set in the centre. Loosen loaf around edge with spatula. Turn out onto platter. Serve with favourite spaghetti sauce. Serves 6.
