Zucchini Casserole

1 large zucchini

3 tbsp butter

3 tbsp flour

3 large tomatoes or 3 cups canned

1 green pepper

1 small onion

Cracker crumbs

Cheese

 

Cut zucchini into small pieces and boil until tender.  Set aside.  Melt butter and blend in flour.  Peel and chop tomatoes, seed and chop green pepper and peel and chop onion.  Add these to butter and flour mixture, season and simmer for about 5 minutes. Place cooked zucchini in a well butter casserole.  Pour tomato mixture over zucchini and lightly cover with bread or cracker crumbs and dot with cheese. Baack at 350 for 30 mins. Serves 6-8
