- 3 cups rotini macaroni
- 1 cucumber, sliced and quartered
- 1 pepper, red or green
- 2 tomatoes, wedged
- 1 ½ cups feta cheese, crumbled
Dressing:
- ½ cup olive oil
- Clove crushed garlic
- 2 Tbsp lemon juice
- ½ tsp oregano
- Salt and pepper to taste
Cook rotini according to package directions and cool. To rotini add cucumber, pepper, tomatoes and feta cheese. Blend dressing ingredients well and pour over rotini mixture. Refrigerate, stirring occasionally. Makes 10 servings.
