- 1/2 cup almonds
- 1/2 cup cashews
- 1/2 cup coconut
- 15 pitted dates
- 2 tbsp coconut oil
- 2 tbsp water
- 1/2 cup oatmeal
Directions:
- Chop the nuts in a blender until finely ground.
- Add coconut.
- Add dates, coconut oil, and water to blender and pulse until everything is mixed together.
- Remove dough from blender and mix in oatmeal.
- Roll into balls (then roll in coconut if desired) or press in a 8×8 pan lined with parchment paper if you want to make bars.
- Refrigerate for 1-2 hours. Cut into bars (if necessary).
