Ingredients
1 tbs olive oil
1 cup onion, chopped
½ green bell pepper, chopped
1 4oz can diced green chilis
1 15.5oz can golden hominy, drained
1 garlic clove, minced
1 14.5oz can diced tomatoes
1 15.5oz can red kidney beans, drained
2 cups pumpkin puree
2 cups reduced sodium veggie broth
2 tsp chili powder
2 tsp cumon
½ tsp pepper
salt and cayenne pepper to taste
Instructions
Heat olive oil in large skillet over medium heat
Saute onion, bell pepper, green chilis, hominy and garlic til tender (~5 minutes)
Stir in tomatoes, beans, pumpkin and veggie broth – cook 10 more minutes
Season with chili powder, cumin and pepper and reduce heat to a simmer
