• 1 large garlic clove
• 1 medium onion
• 1 ½ tsp curry
• 2 ½ lb sweet potatoes
• 4 cups stock or water
• 2 cups milk
• 1 tsp salt
• Pepper to taste
Sauté onion and garlic and a few pinches of salt in oil. Add curry. Place the potatoes and stock in a pan and add the onion and garlic and simmer until the potatoes are cooked. Transfer to a blender and puree. Add the milk and salt and pepper to taste.
