Dana’s Delights – Tomato Bruschetta

tomato bruschetta• 1 loaf Italian bread, cut diagonally to 1 inch slices
• ½ pt cherry tomatoes, quartered
• 1 small yellow pepper, chopped
• 3 Tbsp olive oil, divided
• 3 cloves garlic, divided
• 1 Tbsp fresh basil or 1 tsp dried

Toast or grill bread lightly. In a small bowl combine tomatoes, pepper, 1 tablespoon olive oil, 1 clove garlic (minced) and basil. Cut the remaining 2 cloves of garlic in half. Rub one side of each toasted bread slice with garlic and brush with remaining 2 tablespoons olive oil. Spoon about 1 ½ tablespoons of the tomato mixture onto each slice.
