Jennifer’s Seafood Fritters

  • 1 ½ cups finely chopped lobster or shrimp, or 1 tin clams r 1 pt oysters
  • 2 eggs
  • 1/3 cup Superior milk
  • 1 1/3 cups flour
  • 2 tsp. baking powder
  • ½ tsp. salt
  • Few grains pepper

Drain oysters or clams. Remove any bits of shell and cut in pieces. Beat eggs, add milk. Sift together flour, baking powder, salt and pepper. Add milk mixture. Add oysters or clams. Mix well. If you used lobster pieces: drop by spoonful into shallow fat or salad oil, heated to 375°F. Fry 3 minutes or until brown. They may have to be turned to brown the top. Drain on absorbent paper. Serve with any desired fish sauce.
