Dana’s Delights – Broccoli Souffle

Broccoli-and-Cheese-Casserole2 pkgs frozen chopped broccoli
2 eggs
1 can mushroom soup
1 cup mayonnaise
Tbsp. chopped onion
¼ cup shredded cheddar cheese

Cook broccoli as directed. Strain and cool. Combine remaining ingredients with broccoli and pour into greased casserole dish. Crumble cheese crackers over mixture. Cover and back 30 mins at 350.

Substitue frozen broccoli for fresh! 3 heads of broccoli cut into 1 inch florets. Steamed or boiled.
