¼ cup (50 mL) Earth Balance butter
3 tbsp (45 mL) sun-dried tomatoes finely chopped
1 tbsp (15 mL) Dijon mustard
1 clove garlic, minced
2 tbsp (30 mL) fresh parsley, finely chopped
Preparation:
Step 1 – In a small mixing bowl, combine all the ingredients.
Step 2 – Use as a topping for grilled or steamed vegetables, potatoes or whole grain bread, crackers or melba toast.
Step 3 – Store covered in refrigerator for up to 3 days.
