3 zucchini, sliced into strips
1/2 cup flour
1/2 cup cornstarch
1 teaspoon salt
pepper to taste
2 eggs
1/2 cup beer or milk
Oil for frying
Heat oil in a large, deep-sided pan on your stove over medium heat.
In a small bowl, stir together the flour, cornstarch, salt and pepper. In a second bowl, whisk together the egg and beer (or milk). Dip the zucchini in the egg mixture, then in the cornstarch mixture, back in the egg mixture, then finally back into the cornstarch mixture. Your fingers will be messy. Hang in there. It’s worth it!
Gently transfer batter-coated zucchini into the hot oil. Fry just until golden brown. Serve with your favorite dressing for dipping. Enjoy!
