Roasted Rack of Pork

 

3 to 3 ½ Ilb pork rib roast

1 tbsp dry mustard

1 tbsp ground ginger

1 tsp each salt & freshly ground black pepper

3 red eating apples, quartered

3 small whole onions or shallots

½ cup apple jelly

 

Place pork roast in aluminum foil-lined roasting pain rub mustard and ginger into the pork roast.  Season with salt and pepper.  Cook in a pre-heated 325F oven for 90 minutes.  Remove pork roast from oven.  Skim fat from juices in pan; discard.  Add prepared apples and onions to roasting pan and stir , coat in meat juices. Brush apple jelly onto pork roast.  Return to oven and continue to cook for a further 30 minutes or until apples and onions are cooked and pork roast reaches internal temperature of 160F.  Arrange pork roast on platter with apples and onions.  Garnish with fresh herbs and caraway seeds.  Serve with roasted potatoes and freshly cooked peas.
