1 ½ C. brown sugar

1 C. shortening (half oleo)

3 eggs

1 tsp. soda

4 T. hot coffee

2 ½ C. flour

1 tsp. cinnamon

½ tsp. cloves

½ tsp. allspice

½ tsp. salt

1 C. chopped nuts

1 C. seedless raisins

 

 

Preheat oven 375°. Cream shortening and sugar. Add eggs one at a time, beating well. Dissolve soda in strong, hot coffee (one tablespoon instant coffee to four tablespoons of hot water). Add soda and coffee to first mixture. Beat well. Sift, measure and mix dry ingredients together. Add to other mixture gradually. Add nuts and raisins. Drop by teaspoon on greased cookie sheet 2” apart. Bake 375° 10 minutes. Frost with Mocha Icing when cooled.
