Dana’s Delights – Grandmas Potato Salad

 

  • 6 cups diced peeled cooked potatoes
  • 4 hard boiled eggs, chopped
  •  ½ cup chopped celery
  • ½ cup chopped sweet pickles
  • 1/3 cup chopped onions
  • 1/3 cup chopped radishes
  • ½ cup mayonnaise
  • 3 Tbsp sugar
  • 1 Tbsp vinegar
  • 1 Tbsp milk
  • 1 ½ tsp prepared mustard
  • ½ tsp salt
  • Paprika, optional

In a bowl, combine potatoes (still hot ), eggs, celery, pickles, onions and radishes. In another bowl, combine mayonnaise, sugar, vinegar, milk, mustard and salt, mixed well. Pour over mixture, stir to coat. Cover and refrigerate. Sprinkle with paprika before serving if desired. Yield: 8 to 10 servings.
