• 3 Eggs
  • Lean Cooked Sausage
  • 20g sharp cheese (cheddar)

 

  • Vegetables – you can really use any vegetables you would like, we just grab whatever is sitting in the fridge and throw it in.

I used:

  • Mushrooms
  • Celery
  • Peppers
  • Parsley

 

Optional Spices

  • Paprika
  • Smoked Paprika
  • Chili Powder (Cayenne Pepper)
  • Thyme
  • Sea Salt
  • Freshly ground black pepper

Crack eggs and stir in a bowl adding the veggies and spices to the bowl. Put mixture in pan and cook on medium heat with lid on for first side (about 6-7 minutes) then flip, add cheese and place lid on pan again for 6-7 min. serves 1
