1 onion (finely chopped)
3 medium celery sticks and leaves (finely chopped)
3tbsp of oil
1 3/4 pints tomato juice
1 bay leaf
3 cloves
1/2 tsp dried basil
1 tbsp chopped parsley
1 tbsp lemon juice
Salt and ground pepper
- In a saucepan, fry onion and celery in oil for 7 minutes without browning.
- Pour in tomato juice and add bay leaf, cloves, basil, and parsley. Bring to boil, lower heat,
cover and simmer gently for 15 minutes. - Remove and discard bay leaf and cloves. Add Lemon juice and season to taste
