Tomato Soup
1 onion (finely chopped)
3 medium celery sticks and leaves (finely chopped)
3tbsp of oil
1 3/4 pints tomato juice
1 bay leaf
3 cloves
1/2 tsp dried basil
1 tbsp chopped parsley
1 tbsp lemon juice
Salt and ground pepper
 

  1. In a saucepan, fry onion and celery in oil for 7 minutes without browning.
  2. Pour in tomato juice and add bay leaf, cloves, basil, and parsley. Bring to boil, lower heat,
    cover and simmer gently for 15 minutes.
  3. Remove and discard bay leaf and cloves. Add Lemon juice and season to taste
