cashew ballsIngredients:

  • 1/2 cup almonds
  • 1/2 cup cashews
  • 1/2 cup coconut
  • 15 pitted dates
  • 2 tbsp coconut oil
  • 2 tbsp water
  • 1/2 cup oatmeal

Directions:

  1. Chop the nuts in a blender until finely ground.
  2. Add coconut.
  3. Add dates, coconut oil, and water to blender and pulse until everything is mixed together.
  4. Remove dough from blender and mix in oatmeal.
  5. Roll into balls (then roll in coconut if desired) or press in a 8×8 pan lined with parchment paper if you want to make bars.
  6. Refrigerate for 1-2 hours. Cut into bars (if necessary).
