6 tbsp. (90ml) melted butter, divided              ½ tsp. (2ml) kosher salt

6 tbsp. (90ml) fresh lime juice, divided            ¼ tsp. (1ml) freshly ground pepper

4 (4-oz./115g) cod fillets                                     ¾ cup (175ml) chopped pecans, toasted

 

1.       Combine 4 tablespoons (60 millilitres) each of the butter and lime juice in a small saucepan over low heat; keep warm.

2.       Sprinkle fillets with salt and pepper, and drizzle with remaining 2 tablespoons (30 millilitres) butter and lime juice. Heat a large non-stick skillet coated with cooking spray over medium-high heat. Add fillets; sauté 5 minutes per side or until fish flakes easily with a fork. Top fillets evenly with pecans. Serve with warm lime-butter sauce.
